Chicken Sorrentino

Last night my husband and I went to one of our favorite local places for dinner and music. They have 1/2 price chicken dishes on Thursday nights during the summer. Now I love chicken, but I rarely order it out because I can cook it so well and easily at home. But, I fell in love with the Chicken Sorrentino on their menu.

It is a chicken breast that has been flattened and layered with a thin slice of eggplant that has been lightly floured and sauteed in butter. In between them is a paper thin slice of prosciutto. All of this is topped with some tomato sauce and mozzarella cheese. There is a light sauce of sherry, shallots and stock. All of this is baked until the cheese is bubbly and the chicken is cooked through. It is all served over a bed of lightly sauteed spinach.

It is the most luscious chicken dish I have ever had in my life. It was tender enough to cut through with my fork. I recommend it over a bed of rice so you don't lose any of the wonderful sauce or melted cheese. It was a light meal with rich flavors.

There are many great items on the Rhythms menu, but Chicken Sorrentino is a real keeper for me!
